Sensory and Consumer Acceptability Test for the Selected 5 Maize Varieties in Tabora and Katavi regions

A team of researchers from TARI Selian Center conducted the sensory and consumer acceptability tests for the selected 5 maize varieties prior to introduction to the market. Palatability tests were done at Kawanzige village, Kakase ward, Mpanda Municipal-Katavi region and Mwagerezi village, Ndono ward, Uyui district,Tabora region. A total of 38 (11 female and 27 males) panelists participated in evaluation of sensory and consumer acceptability tests for the selected 4 varieties and 1 local check. Panelists used objectively to evaluate the consumer acceptability before maize varieties introduced to the market. The 4-point scale (like extremely, like very much, like moderately and like slightly) was used to evaluate organoleptic attributes. The selected panelists were also involved in evaluating two products (porridge and stiff porridge (ugali) from processed maize varieties.
